Recipe: V8 Chili

As I was growing up my Stepdad would make his infamous chili and it was delicious! For some reason he stopped making it and after years of craving it I finally asked my Mom what he put in it that made it taste so great so I could make it. While she gave me his recipe, I ended up modifying it over the years and finally settled on the one that I’m about to share here.

Please note a couple of things:

  • Don’t let the tomato base scare you. As much as my husband doesn’t care for tomatoes he really LOVES (I can’t stress that enough) my chili.
  • The only thing that I omitted was the bay leaf that he would put in it at the end.
  • You can make this with, or without, beans. It’s more a Texas type of chili with more meat than beans anyway so this is perfectly acceptable. I would probably add another 1-2lbs of hamburger if you do this just to keep the consistency accurate.

Without further ado, my V8 chili recipe:

1/2 cup Worcestershire sauce

Add onions to pan
Add Worcestershire sauce
1/2 tbsp garlic (fresh garlic is best, but I will use minced and it turns out good too)
1/2 tsp oregano
1/2 tsp parsley
1-2 tbsp McCormick’s Grill Mates Hamburger seasoning
Blend/stir
*The concept is to let the meat soak in all the flavor and spices while it cooks. It makes the chili that much better.

While the meat is cooking, combine the following ingredients to a large crockpot:

1-14.5oz can diced tomatoes w/rosemary and oregano
2-16oz cans chili beans (medium or spicy/hot)
2 packets chili seasoning (I use McCormick’s)
1-64oz bottle of V8 juice (yep V8 juice; you can use the spicy blend for a ‘kick’)
*tip: only pour in half of V8 juice to leave room for cooked meat (pour in remaining amount or until you reach desired consistency after the meat has been added)

Slowly add cooked meat to crockpot

Stir

 

 

Set crockpot and cook:
High 4 hours
Low: 6-8 hours

Stir occasionally
Serve w/remaining onion (chopped), shredded cheese and Ritz crackers.
For a spicy effect add a little Tabasco.

Disney on Ice: 100 Years of Magic (REVIEW)

Disclosure: As an FFA, I received free tickets to attend this production. Receiving these tickets has not affected my personal opinion or professional review in which you’ll read below. 

IMG_4415100 Years of Magic opened up with the ever comical and oh-so-loveable Mickey & Minnie Mouse at Chaifetz Arena in St. Louis tonight.

Hearing his voice sends a message directly to the kid in me and I find myself sitting on the edge of my seat with a smile upon my face. Yes, after all of these years of being a grown woman…that mouse still has an effect on me!

From there Aladdin and the funniest genie around took to the ice. They were followed by several (but not all) Disney Princesses; Nemo, Marlon, Dori (Finding Nemo); Buzz Lightyear and Woody (Toy Story), but the best part was the 1st half wrap up of “It’s a Small World After All” — it was truly beautiful…and that’s just the first half of the show!

IMG_4429After the break we were graced with the storylines of Pinocchio, Gepetto, Jiminy Cricket followed by Mulan; Mr. Incredible (he ever performed to, “I’m Too Sexy”), Elastigirl, Violet, Dash, Jack Jack & Edna Mode (The Incredibles); Simba, Nala, Timon & Pumbaa (The Lion King) and came to an end with a full-on cast and crew finale complete with lights, fireworks and fog.

Once again I was taken on a journey back to when I was younger and captivated by those wonderful characters that had taken a hold of not only mine, but my daughter’s heart as well.

The only negative that I can honestly say about tonight’s performance was the surface of the ice. Four performers unfortunately slipped on their landings and I believe this has everything to do with the fact that the weather is still very warm in St. Louis and with this being the first show the ice hadn’t fully set yet thus causing the falls. However, I must attest to the fact that the performers immediately got back on their feet and continued on with the show as if nothing had happened. It was absolutely professional in every way!

Disney on Ice: 100 Years of Magic excelled in depicting those treasured memories with the audience while all along dazzling everyone with their ice skating performances. They know how to put on a great show and they proved that ten-fold with this production. This is not a show to be missed and fortunately they’ll be here until Sunday so you still have plenty of time to catch it before they leave for the next city on their tour.

Life is a Crazy Ride — Where is Jenntality?

Here I am! I’ve had to semi-neglect my blog for the last couple of weeks (I’ve been around, I just haven’t had a whole lot of time to do much more than approve comments).

Where the otherwise relaxing summer came to an end the hectic school year began, which means I was prepping for Girl Scouts (I’m a Girl Scout Leader of 17 amazing Brownies), dance class, and maintaining all of the registrations & website updates for the 3rd Annual 5K Walk/Run for the Heroes (please do check that link out; I’m so proud of what we’re accomplishing!)

It sure is a lot easier to write when you don’t have so much going on. With that said, now that things have had some time to settle and allowed us to get accustomed to our new busy school year schedule, I’m back! I’ve have really missed it…

Please don’t misunderstand me, I actually love being busy. I see it as some sort of personal challenge of, “Can I keep up?!” and I’ll push myself as well as go without sleep just to make sure I can! Hence the reason I’m sitting here writing this blog at 2:36 in the morning 😉

This week we have dance (my daughter takes tap, ballet, jazz and gymnastics) on Monday and our Girl Scout meeting on Thursday. Next week we have dance, again on Monday) and Thursday night we’re going to see our favorite show on ice…Disney on Ice! I’m overly excited about this as it allows me to be a big ol’ kid and each show always leaves me with a sense of awe. Not to mention that it sincerely relaxes me, but most importantly — it is truly good for the soul (I guess that goes with the entire being a kid thing).

Tomorrow I’ll be spending some time catching up on housework & laundry (yep, that’s been neglected, too!) so we can be ready for the week ahead. Fortunately it’s a short school week and we get to enjoy a 3-day weekend.

At any rate, I don’t want to bore you all with the simple details. However, I did want to hop on here and let you know that I’m still alive, I’m still here and I can’t wait to get back to writing more regularly.

My Interview with Talk of the Town For the Missouri Military Memorial Foundation

I had the opportunity to talk about our 501(c)3 non-profit organization the Missouri Military Memorial Foundation and our upcoming fundraiser – the 5k Walk/Run for the Heroes taking place on October 12, 2013 at Jefferson Barracks County Park.

The interview was with Talk of the Town (Hubbard Radio) which aired last Sunday morning on 106.5 The Arch, 92.3 WIL and 101 ESPN here in St. Louis.

While I could write about everything that we spoke about during the interview, I think the actual interview covers it all quite nicely. So I don’t want to waste your time, but I would like to add that I feel it gives everyone a bit more insight into everything that we do, why we do it and who we’re doing this for.
